CIAMBELLE IN THE SHAPE OF HEART

INGREDIENTS

500 g (4 cups) 00 flour
50 g (1/4 cup) sugar
10 g fresh yeast
1 lemon (zest)
1 orange (zest)
1 egg
210 ml (3/4 cup) water
4 g salt
40 g butter (soft)
Hazelnut spread
Oil for frying
sugar

METHOD

  1. In a bowl add the flour, sugar, yeast, lemon zest, orange zest, egg, water, salt and butter and mix. When the dough begins to form, work it with your hands until you get a soft dough. Cover with cling film and leave to rise for 2 hours or until doubled in volume.
  2. After the time has passed, divide the dough into two halves. Roll out the first half and use the heart-shaped mold (mold size 10 cm) to make the shapes.
  3. Transfer them to the baking tray lined with baking paper and, using the smaller heart-shaped mold, prick the center. Cover with a cloth and leave to rise for 1 hour.
  4. Roll out the other half of the dough and divide it into several parts. Spread the hazelnut cream on one part of the dough and cover with another, sealing the edges well.
  5. Cut the dough into a heart shape and transfer it to the baking tray lined with baking paper. Cover with a cloth and leave to rise for 1 hour.
  6. After the time has passed, transfer them to the pan with hot oil and fry them until golden brown.
  7. Cover the heart-shaped donuts with sugar and serve.
