Ingredients:
2 courgettes
100 g of raw or cooked ham (depending on taste)
100 g of spreadable cheese (such as ricotta, Philadelphia or goat cheese)
A drizzle of olive oil
Salt and pepper to taste
Fresh basil (optional, for garnish)
Preparation:
Prepare the courgettes: Wash the courgettes and cut them into thin slices lengthwise (about 3-4 mm). You can use a mandolin to obtain uniform slices.
Grilling Zucchini: Heat a grill or nonstick skillet with a drizzle of olive oil. Grill the zucchini slices for 1-2 minutes per side, until soft but still crisp. Add a pinch of salt and pepper to taste.
Prepare the filling: In a bowl, mix the cream cheese with a little pepper and, if you like, some chopped herbs (such as thyme or basil).Fill the rolls: On each slice of grilled courgette, spread a little cream cheese and place a slice of ham on top.Roll up: Roll each slice of courgette on itself, forming rolls. If necessary, secure them with a toothpick.Serve: Arrange the rolls on a serving plate, add a few leaves of fresh basil and, if you like, a drizzle of extra virgin olive oil for a finishing touch.Courgette rolls are a fresh and tasty appetizer, perfect for a light lunch or dinner in the summer.
