3 egg yolks
50g sugar
125g soft butter
1 teaspoon baking powder
1 teaspoon vanilla

180-200g flour

3 egg whites (100-110 g)
125 g sugar
a pinch of salt
1 packet of vanillin or vanilla sugar (40 g) or its equivalent in the form of corn starch with 1-2 teaspoons of vanilla sugar
600 g cream (20% fat)

Preparation:
Preparation of the dough:
In a large bowl, mix the egg yolks with the sugar, softened butter, baking powder, vanilla and a pinch of salt until smooth.
Gradually add the flour, stirring constantly until the dough becomes smooth. If necessary, add a little more flour to get the right consistency.
Making the cover:
Beat the egg whites with a pinch of salt until stiff.
Gradually add the sugar, continuing to beat until the mixture becomes glossy and thick.
Gently add the vanilla and cream until you obtain a uniform mass.
Installation:
Prepare a 20×20 cm square pan by lining it with baking paper.
Spread half of the dough on the bottom of the pan, creating the base of the cheesecake.
Pour the prepared mixture onto the cake.
Level the surface and grate the remaining dough on top.
Baking:
Bake in a preheated oven at 170-180°C for 50-60 minutes until the cheesecake is golden and the surface hardened.
Cool and serve:
Allow the cheesecake to cool completely before removing it from the pan.
If you like, sprinkle with powdered sugar for decoration before serving.
