SOFT AND STRONG LOIN ROLLS

Introduction

Pork loin rolls are a tasty and quick second course to prepare, perfect for a family dinner or to amaze your guests with something simple but effective. The pork loin, stuffed with mozzarella and ham, becomes a casing that holds a stringy and tasty heart. Soft and irresistible, they are perfect for any occasion!

Ingredients

8 thin slices of pork loin
8 slices of cooked ham
200 g of mozzarella (in block or well dried)
1 egg
Flour to taste
Breadcrumbs to taste
4 tablespoons of grated parmesan
Salt and pepper to taste
Extra virgin olive oil or butter to taste for cooking

Instructions

Prepare the filling:
Cut the mozzarella into sticks.
Lay out the slices of loin on a flat surface and place a slice of cooked ham and a stick of mozzarella on each.
Form the rolls:
Roll each slice of loin on itself, starting from the short side, and close it with a toothpick.
Bread the rolls:
Beat the egg with a pinch of salt and pepper in a bowl.
Pass the rolls first in the flour, then in the egg and finally in the breadcrumbs mixed with the grated parmesan.
Cook the rolls:
Heat a drizzle of oil or a knob of butter in a non-stick pan.
Brown the rolls over medium heat, turning them gently on all sides until evenly browned.
Lower the heat, cover with a lid and cook for 10-12 minutes, adding a drop of water or broth to keep them soft.
Serve:
Remove the toothpicks and serve the rolls hot, accompanied by their cooking juices.
Serving and storage tips

How to serve: The loin rolls go well with a side of grilled vegetables, mashed potatoes or a fresh green salad.
Storage: You can store them in the refrigerator for 2 days, in an airtight container. Reheat them in a pan or in the oven with a drizzle of water to keep them juicy.
Variations
With vegetables: Add a strip of grilled courgette or carrot inside for a fresh and colorful note.
With speck: Replace the cooked ham with speck for a more intense flavour.
In the oven: Arrange the rolls on a baking tray, drizzle them with a drizzle of oil and cook them in the oven at 180°C for 20 minutes.
