Pistachio Snowball Cookies

Ingredients:

1 cup unsalted butter, softened
1/2 cup powdered sugar (plus extra for topping)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup finely chopped pistachios (unsalted)
1/4 tablespoon salt

Directions:

Preheat oven:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make the dough:
In a large mixing bowl, beat together the softened butter and 1/2 cup powdered sugar until creamy and smooth.
Add the vanilla extract and mix until well combined
Mix the dry ingredients:
Gradually add the flour and salt, mixing until the dough comes together. Stir in the finely chopped pistachios, making sure they are evenly distributed throughout the dough.
Shape the cookies:
Take about 1 tablespoon of dough and roll it into a small ball. Place each ball on the prepared sheet, leaving about 1 inch of space between them.

Bake:
Bake in the preheated oven for 12-15 minutes, or until the bottoms are lightly golden. The cookies should still be light in color on top.
Coat the cookies:
Once baked, let the cookies cool for about 5 minutes, then roll them in powdered sugar while they are still warm. Once they have cooled completely, roll them in powdered sugar again for a second coating to give them that snowy effect.
Serve:
Transfer to a plate and enjoy these buttery pistachio nut snowball cookies with a cup of tea or coffee!
