Crispy sausages in puff pastry are a real hit at any occasion: from parties, to family gatherings, to everyday meals. Which one is best? Let’s start with the basic recipe:

Ingredients:

1 onion, finely chopped – adds a slightly sweet flavour.
1 tablespoon olive oil – perfect for frying.
1 grated carrot – adds moisture and nutritional value.
Slices of chopped bacon – intensely smoky flavour.
1 teaspoon dried rosemary – an aromatic, earthy accent.
1 teaspoon savory – a distinctive herbal addition.
400g minced meat (beef, pork or mixed) – the heart of our sausages.
2 tbsp breadcrumbs – adds structure and absorbs excess moisture.
1 egg – to bind the ingredients together.
Salt and pepper to taste – the base of the spices.
500g puff pastry – our crunchy base.
1 beaten egg – to brush the pie and give it a golden sheen.
Sesame seeds – for a crunchy texture and extra flavour.

Step by step instructions:

Heat the olive oil in a frying pan over a medium heat. Add the onion and fry for about 5 minutes until soft and translucent.
Add the grated carrot and bacon. Fry until the bacon is crispy and the carrots are soft.

Add the rosemary and savory to release their flavours. Then add the minced meat and fry, grinding it, until golden and fried well (about 7-10 minutes). Set aside to cool slightly.
In a large bowl, mix the meat mixture with the breadcrumbs and one egg. Season with salt and pepper to taste.
Preheat the oven to 200°C. Roll out the puff pastry to a thickness of 2-3 mm and cut into rectangles of about 10 x 12 cm.
Place a portion of the meat filling along one edge of each piece of pastry. Roll the pastry up, sealing the edges, then use a fork to crimp the edges decoratively.
Arrange the wrapped sausages on a baking sheet lined with baking paper. Brush the tops with the beaten egg and sprinkle with sesame seeds.
Bake for 20-25 minutes until the pastry is golden and crispy.
