Baked Potatoes with Raclette and Smoked Bacon
A comforting and tasty dish, perfect for cheese and bacon lovers!
Ingredients
4 large potatoes – about 1.5 kg
200 g raclette cheese – about 2 cups, sliced
150 g smoked bacon – about 1 cup, diced
1 tbsp. tablespoon olive oil
Salt and pepper, to taste
2 tbsp. tablespoons fresh chives (optional, for garnish)
Directions
- Preheat oven
Preheat oven to 200°C (400°F). - Prepare the potatoes
Wash and dry the potatoes.
Prick them several times with a fork.
Wrap each potato in foil. - Cook the potatoes
Place the wrapped potatoes on a baking sheet.
Place in the oven and cook for 45-60 minutes, or until tender. - Prepare the bacon
In a frying pan, brown the bacon over medium heat until crispy.
Remove the bacon from the pan and drain on paper towels. - Assemble
Once the potatoes are cooked, remove from the oven and carefully unwrap the foil.
Cut a slit in the top of each potato and drizzle with olive oil.
Place the slices of raclette cheese and then the bacon on top of each potato. - Gratinate
Return the potatoes to the oven for 5-10 minutes, or until the cheese is melted and lightly browned.

- Finish Sprinkle with fresh chives (if desired) and serve hot.
