4 eggs
1 1/2 cup grated coconut
1 cup corn flour
2 cups sugar
1/2 cup cornstarch
1 cup whole milk
3 tbsp. Wheat flour
1 tbsp. baking powder
2 tbsp. Manteca
To decorate:
A can of sweetened condensed milk
100 gr. grated coconut
Preparation:
Mix the condensed milk and grated coconut in a bowl and leave there.
Method of preparation
Put the eggs, milk, flour, sugar, corn flour, butter, cornstarch and grated coconut in the blender. Beat for a minute until the mixture is smooth.
Don’t worry if it seems liquid. Finally add the yeast and mix lightly with a spoon to combine everything.
Butter and flour a rectangular mold (30 cm x 20 cm) and pour in the mixture. Bake at 200°C for 40 minutes.
Once cooked, remove from the oven and pour the syrup over it while it is hot.
