White courgette parmigiana

INGREDIENTS

  • 5 medium courgettes;
  • 200 g of stringy cheese, scamorza, mozzarella (I used Galbanino);
  • Grated cheese to taste;
  • 200 g of cooked ham without polyphosphates;
  • Extra virgin olive oil;
  • Salt;
  • Pepper;
  • Clay shard

STEP

  1. Wash, trim and cut the courgettes into thin slices widthwise;
  2. Pour a drizzle of extra virgin olive oil into the clay pot, arrange a first layer of courgettes, place thin slices of stringy cheese, slices of cooked ham, salt, pepper, grated cheese and season with a drizzle of oil;
  3. Cover everything with another layer of courgettes;
  4. Proceed in layers until you run out of ingredients;
  5. Finish with a layer of stringy cheese slices, grated cheese and a little more oil;
  6. Cover the pot with a sheet of aluminum foil;
  7. Cook in the oven (preheated to 200 degrees) for about 1 hour, remove the aluminum foil and brown in the last 10 minutes;
  8. Let it rest for a few minutes before serving;
  9. Enjoy the white zucchini parmigiana in the crock hot or warm… it’s truly fantastic!!
