1 sachet of dehydrated yeast for savory pies (Pizzaiolo Paneangeli instant);
180 ml of milk;
90 ml of sunflower seed oil;
1 vial of almond flavoring;
200 g of mixed candied fruit;
The grated zest of a lemon;
Sugar granules;
Whole almonds
STEP
Separate the eggs, beat the egg whites with a pinch of salt;
In another bowl pour the egg yolks and whisk them with the sugar for 5 minutes;
Add the lemon zest to the egg yolks, then, while still whisking, gradually add first the milk and then the sunflower seed oil;
After that add the vial of almond flavouring, the flour (sieved) in several batches, then the yeast;
In this preparation there is no need for leavening as it is an instant yeast;
Add the whipped egg whites and mix very delicately from top to bottom;
Now pour the candied fruit into the mixture and mix until everything is well combined;
Pour into the dove-shaped mold (I used the 750 g paper one) not all at once but using 1 spoon, then add the granulated sugar and the whole almonds and put in the oven at 180 degrees for about 40.45 minutes in fan-assisted mode, pay attention to your oven if it should color too much after 20 minutes open the oven and cover the dove with a sheet of baking paper;
Remove from the oven, let cool, then transfer to a nice cake tray and serve with a nice coffee fabulous!!
