INGREDIENTS
- 1 red pepper;
- 1 yellow pepper;
- Extra virgin olive oil to taste;
- 150 g of stale bread;
- Oregano, basil to taste;
- Salt, pepper to taste;
- 1 clove of garlic.
STEP
- First of all, let’s wash the peppers thoroughly;
- Cut in half, remove the stalk and white filaments;
- After that cut them into thin strips;
- Pour the peppers that we have cut into a bowl, add oil, salt, pepper and chopped garlic (you can also add black olives and capers if you like);
- Blend the bread with the mincer, pour it into the bowl (set aside a small amount, less than half);
- Add some of the blended bread to the bowl of peppers, add the oregano and basil;
- Mix (I do it with my hands) to combine all the ingredients well;
- Take a baking tray, cover with baking paper;
- Pour in our pepper mixture;
- Level with a spoon, sprinkle with the remaining breadcrumbs and a drizzle of oil;
- Cook (in a preheated oven) at 180 degrees for 20 minutes (the last 5 minutes only in grill mode to have our peppers with a crunchy crumb).
- Once cooked, remove the peppers from the oven, transfer them to a nice serving dish, add a few basil leaves and serve… they are FABULOUS!
