INGREDIENTS
- 2 medium sized courgettes;
- 2 eggs;
- 60 g flour;
- 80 g of grated cheese (I used pecorino);
- Salt, pepper, parsley, peanut oil for frying.
STEP
- Trim and wash the courgettes;
- Using the mandolin, slice the courgettes, place the slices in a bowl, add a couple of pinches of salt. Mix well and let rest for about an hour;
- In a bowl combine the courgettes (well squeezed), the eggs, the flour, the cheese, the salt, the chopped parsley and the pepper;
- Mix carefully until you obtain a smooth and not too dense mixture;
- In a large enough pan, heat the oil and, with the help of a spoon, start pouring in the courgettes, taking care to turn them every now and then;
- Once they are golden brown, drain and place the courgettes on a plate lined with absorbent paper;
- Transfer our fritters to a serving plate and… enjoy
