Gilded and fried anchovies

INGREDIENTS

  • 500 g anchovies;
  • 2 egg;
  • Flour to taste;
  • Peanut oil to taste;
  • Salt to taste;
  • Pepper to taste

STEP

  1. Clean the anchovies well, removing the head and their innards. Then open them delicately like a book, removing the central bone, being careful not to divide them. Wash with running water and place on a cotton cloth;
  2. Pour the eggs into a bowl, add a pinch of salt and pepper and beat everything well;
  3. Pour the flour into a dish and proceed to flour the anchovies;
  4. Pass the anchovies first in the flour and then in the egg.
    Pour plenty of oil into a pan and bring it to temperature, then fry the anchovies on both sides until golden brown;
  5. Remove the anchovies with a slotted spoon and let them drain on sheets of kitchen paper;
  6. Serve the golden and fried anchovies piping hot, they are FABULOUS!
