Clean the anchovies well, removing the head and their innards. Then open them delicately like a book, removing the central bone, being careful not to divide them. Wash with running water and place on a cotton cloth;
Pour the eggs into a bowl, add a pinch of salt and pepper and beat everything well;
Pour the flour into a dish and proceed to flour the anchovies;
Pass the anchovies first in the flour and then in the egg. Pour plenty of oil into a pan and bring it to temperature, then fry the anchovies on both sides until golden brown;
Remove the anchovies with a slotted spoon and let them drain on sheets of kitchen paper;
Serve the golden and fried anchovies piping hot, they are FABULOUS!
