The Altamurana Almond Rosata

INGREDIENTS

  • 200 g of almond flour;
  • 4 eggs;
  • 1 sachet of yeast;
  • 1 small glass of Limoncello;
  • 1 teaspoon ground cloves;
  • 1 teaspoon cinnamon;
  • 1 tablespoon of wheat or corn starch (about 20 g);
  • Grated zest of 1 orange or lemon;
  • 150 g of icing sugar

STEP

  1. Separate the whites from the yolks, beat the egg whites with a pinch of salt, lightly beat the yolks;
  2. Add the egg yolks to the whipped egg whites, add the icing sugar and mix gently, add the almond flour (one spoonful at a time) and mix;
  3. Then add the starch, the limoncello and the flavourings… finally the sifted yeast and mix until everything is well combined;
  4. Take a baking pan (24 cm in diameter), grease it with butter, line it with baking paper (also on the sides of the pan) and cook at 180 degrees (in a pre-heated oven) for 30 minutes;
  5. Remove from the oven and let cool, transfer to a nice serving dish and serve with a good coffee or a liqueur of your choice!! Fabulous!!
