INGREDIENTS
- 4 medium aubergines;
- 200 g of smoked scamorza cheese, sliced;
- 200 g of mortadella;
- 200 g of grated pecorino cheese;
- Salt, flour 0, 4-5 eggs and peanut oil for frying
Ingredients for the simple sauce:
- Half an onion, chopped;
- 1 litre of tomato puree;
- Extra virgin olive oil;
- Salt, pepper and fresh basil
STEP
- First, let’s prepare the tomato sauce:
- Pour a drizzle of extra virgin olive oil into a pan and add the chopped onion, stir often to prevent it from burning and leave it to brown for a couple of minutes;
- Add the tomato puree and a little water, season with salt and cook over low heat for about 40 minutes. Once cooked, add the basil leaves, breaking them up by hand, turn off the heat and set aside;
- Wash the aubergines, dry and peel them, cut them into slices lengthwise with a thickness of 2 or 3 mm and place them in a container, sprinkling them layer by layer with a little coarse salt to make them lose the bitter vegetation water. Cover with a plate and put a weight on top, leave them like this for at least 30 minutes;
- Rinse the aubergines to remove the salt and dry them very well with absorbent paper, then pass them in the flour and then in the beaten eggs and fry, place them on a plate lined with paper to dry the oil;
- After that, take a baking dish, pour two ladles of sauce and a little cheese and line up the aubergines, add the scamorza, the sliced mortadella, the grated cheese and the sauce, lay out another layer of aubergines and always cover with grated cheese, scamorza and the sliced mortadella and sauce and so on until the ingredients are used up. Finish with a layer of sauce and cheese;
- Bake the tray of aubergine parmigiana at 190 degrees (preheated oven) for 30 minutes, browning the surface well in the last 5 minutes;
- Once ready, let it settle for a few minutes before serving;
- Simply FABULOUS!!
NOTE
Store the eggplant parmigiana in the refrigerator covered with cling film for 1-2 days. It can be frozen cooked, perhaps already divided into portions, and defrosted in the refrigerator when needed before heating it.
