A nice bunch of mixed aromatic herbs (thyme, mint, basil, parsley);
Salt;
Pepper;
Juice of 1 lemon;
1 clove of garlic;
Plenty of extra virgin olive oil
STEP
Wash the courgettes and trim them;
Now using a mandolin or, if you prefer, a very sharp knife, slice them very thinly, so that they are soft after marinating;
Prepare a marinade with plenty of olive oil, lemon juice, sliced garlic, salt, pepper and finely chopped aromatic herbs;
In a (glass) container, make a layer of courgettes, add a few spoonfuls of marinade and continue in this way in layers until all the ingredients are used up;
Let it rest in a cool place, wrapped in aluminum foil, overnight, so that they absorb the flavor of the marinade well;
A very simple preparation suitable for summer evenings… fresh, quick, excellent!!
