Zucchini Carpaccio

INGREDIENTS

  • 5 courgettes;
  • A nice bunch of mixed aromatic herbs (thyme, mint, basil, parsley);
  • Salt;
  • Pepper;
  • Juice of 1 lemon;
  • 1 clove of garlic;
  • Plenty of extra virgin olive oil

STEP

  1. Wash the courgettes and trim them;
  2. Now using a mandolin or, if you prefer, a very sharp knife, slice them very thinly, so that they are soft after marinating;
  3. Prepare a marinade with plenty of olive oil, lemon juice, sliced ​​garlic, salt, pepper and finely chopped aromatic herbs;
  4. In a (glass) container, make a layer of courgettes, add a few spoonfuls of marinade and continue in this way in layers until all the ingredients are used up;
  5. Let it rest in a cool place, wrapped in aluminum foil, overnight, so that they absorb the flavor of the marinade well;
  6. A very simple preparation suitable for summer evenings… fresh, quick, excellent!!
