Pipi e Patate: Calabrian recipe

INGREDIENTS

  • 1 kg of green and yellow peppers:
  • 1kg of potatoes:
  • Extra virgin olive oil to taste;
  • Salt and pepper to taste

STEP

  • The first thing we do is take the potatoes, wash them, peel them and cut them into regular wedges;
  • After that we pour them into a bowl full of water to eliminate the excess starch, then we dry them by dabbing them with a cotton cloth;
  • Now let’s dedicate ourselves to the peppers, wash them, clean them (removing the ends and seeds) and cut them into strips;
  • Take a non-stick pan large enough, pour in plenty of oil and bring to temperature;
  • Once the oil has reached temperature, we dip our potatoes in it and brown them over a high flame, turning them very often;
  • Let’s fry our potatoes for about 10 minutes and, when they have taken on a nice golden color, add our peppers cut into strips;
  • Let it cook for another 10 minutes always on a high flame, continuing to stir everything to obtain uniform cooking;
  • We adjust with salt and pepper only at the end to preserve the crunchiness of the peppers and potatoes;
  • Our Pipe and Potato dish is ready to be enjoyed… TOO GOOD!
