INGREDIENTS
- 1 kg of green and yellow peppers:
- 1kg of potatoes:
- Extra virgin olive oil to taste;
- Salt and pepper to taste
STEP
- The first thing we do is take the potatoes, wash them, peel them and cut them into regular wedges;
- After that we pour them into a bowl full of water to eliminate the excess starch, then we dry them by dabbing them with a cotton cloth;
- Now let’s dedicate ourselves to the peppers, wash them, clean them (removing the ends and seeds) and cut them into strips;
- Take a non-stick pan large enough, pour in plenty of oil and bring to temperature;
- Once the oil has reached temperature, we dip our potatoes in it and brown them over a high flame, turning them very often;
- Let’s fry our potatoes for about 10 minutes and, when they have taken on a nice golden color, add our peppers cut into strips;
- Let it cook for another 10 minutes always on a high flame, continuing to stir everything to obtain uniform cooking;
- We adjust with salt and pepper only at the end to preserve the crunchiness of the peppers and potatoes;
- Our Pipe and Potato dish is ready to be enjoyed… TOO GOOD!
