Zucchini “Scapece” or “Poverella” Style

INGREDIENTS

  • 3 courgettes;
  • Extra virgin olive oil for marinating;
  • 2 cloves of garlic;
  • 1 chili pepper;
  • qb of fresh mint;
  • 80 ml of white wine vinegar;
  • salt to taste;
  • Extra virgin olive oil for frying.

STEP

  1. First, trim, cut the courgettes into slices and leave them in the sun for a few hours, so that they lose their vegetation liquid;
  2. Pour the extra virgin olive oil, vinegar, mint leaves, garlic cloves cut into slices, chopped chilli pepper and salt into a bowl;
  3. Mix everything together, cover with cling film and set aside;
  4. After preparing the marinade, fry the courgettes in a pan with seed oil at a not too high temperature, once golden, place on a plate lined with absorbent paper;
  5. Once all the courgettes are finished, season with the marinade;
  6. If you need to add more oil and salt, mix gently and let them rest for at least 1 hour before serving. Amazing!!
