First, trim, cut the courgettes into slices and leave them in the sun for a few hours, so that they lose their vegetation liquid;
Pour the extra virgin olive oil, vinegar, mint leaves, garlic cloves cut into slices, chopped chilli pepper and salt into a bowl;
Mix everything together, cover with cling film and set aside;
After preparing the marinade, fry the courgettes in a pan with seed oil at a not too high temperature, once golden, place on a plate lined with absorbent paper;
Once all the courgettes are finished, season with the marinade;
If you need to add more oil and salt, mix gently and let them rest for at least 1 hour before serving. Amazing!!
