Pour the flour into a fountain shape on your work surface and add the eggs, yeast, sugar, melted butter and a pinch of salt, knead everything well until you obtain a perfectly smooth and homogeneous mixture, add the almonds, trying to distribute them evenly in the mixture;
When the mixture is well blended, divide it in half and make two rolls about thirty centimetres long;
Brush the loaves with beaten egg yolk, place them on a baking tray brushed with butter and cook them at 200 degrees for 20 minutes;
Remove from the oven, let the two rolls cool, then cut them into diagonal slices one centimetre thick;
Place the slices back on the baking tray and cook at 160 degrees for 20 minutes, remove from the oven and leave to cool completely;
Store the marzipans in a tin box lined with greaseproof paper and then tightly closed, serve them with ice cream, pudding or sweet wine.
