Grilled Eggplants

INGREDIENTS

  • 2 aubergines;
  • Extra virgin olive oil;
  • Rocket;
  • Salt and pepper;
  • A clove of garlic, minced;
  • 1 chili pepper;
  • Cheese flakes if desired;
  • Balsamic vinegar

STEP

  1. Take 2 aubergines, preferably large ones, slice them and grill them;
  2. Chop the garlic and chilli pepper into small pieces;
  3. Place the aubergine slices on a plate, season with garlic, rocket, chilli pepper, oil, cheese flakes (if you like) and a splash of balsamic vinegar;
  4. Accompany them with some slices of excellent Altamurano bread, truly delicious!
