INGREDIENTS

  • 2 medium round aubergines;
  • 2 eggs;
  • 100 g of type 0 flour;
  • sliced ​​cheese to taste;
  • 100 g of sweet salami;
  • 100 g breadcrumbs;
  • Half a glass of milk;
  • Salt to taste;
  • peanut oil for frying

STEP

  1. Wash, dry and slice the aubergines into approximately 1 cm slices;
  2. Take 3 plates: pour the flour into one, the whole eggs into the second, which we will beat together with the salt and milk, and the breadcrumbs into the third;
  3. Place a slice of cheese and 2 slices of sweet salami on the slice of aubergine, close with the other slice:
  4. Now proceed with the breading: take a cutlet filled with aubergine, pass it in the flour on both sides;
  5. After that dip it in the beaten eggs;
  6. And finally in the breadcrumbs breadcrumbs;
  7. Fry in plenty of peanut oil;
  8. Drain on a plate lined with absorbent paper, serve hot… enjoy your meal!!
