Rustic pie with tuna, courgettes and cream cheese

INGREDIENTS

  • 200 g of tuna in olive oil;
  • 300 g of courgettes;
  • 200 g of cream cheese (I used Philadelphia);
  • 1 roll of puff pastry;

For the filling:

  • 2 eggs;
  • 80 g of grated cheese;
  • 4 tablespoons of extra virgin olive oil;
  • 100 ml of milk;
  • Half an onion;
  • Salt and pepper

STEP

  1. Dice the courgettes, finely chop the onion and brown them both in a pan with a drizzle of oil:
  2. Once the courgette and onion have softened, turn off the heat and let it cool;
  3. Then pour the courgette into a bowl, add the salt, pepper, tuna and philadelphia and mix until everything is well combined;
  4. Place the pastry in a baking dish and add the courgette mixture;
  5. Beat the eggs with the milk and grated cheese, pour it over the courgettes and finish by decorating the edge;
  6. Cook at 180 degrees (hot oven) for 30 minutes;
  7. Remove from the oven, transfer to a plate and serve… fabulous!!!!
