Spaghetti with pecorino cheese, pepper and new broad beans

INGREDIENTS

  • 200 grams of spaghetti;
  • 100 grams of pecorino romano;
  • 100 grams of broad beans in pods;
  • 1 tablespoon extra virgin olive oil

STEP

  1. First, shell the broad beans, sauté them in a pan with a drizzle of oil and cook for a couple of minutes;
  2. Take a bowl, pour in the grated pecorino, the pepper and add two ladles of pasta cooking water;
  3. Mix everything well to obtain a smooth cream without lumps;
  4. Pour the spaghetti into the pan with the broad beans, add the pecorino cream, I suggest you finish cooking with a little cooking water which will help all the ingredients blend together;
  5. Plate, add a handful of grated pecorino, a little black pepper and… enjoy your meal!!
