Baked omelette with courgettes, scamorza and bacon

INGREDIENTS

  • 2 medium courgettes;
  • 5 eggs;
  • 70 g. of grated cheese (I used aged pecorino);
  • 200 g diced bacon;
  • 30 g. of breadcrumbs;
  • 1 small scamorza (or half of a normal one);
  • Salt;
  • Pepper;
  • Parsley;
  • extra virgin olive oil

STEP

  1. Trim and wash the courgettes well;
  2. Pour the eggs into a bowl, add the cheese and start mixing the ingredients with a fork;
  3. Combine the breadcrumbs, the scamorza cut into very small pieces and finally add the courgettes grated with a grater with large holes, the pepper, the chopped parsley and the salt (not much salt because the cheese is already very tasty);
  4. Mix all the ingredients well;
  5. Take a donut pan, pour a drizzle of extra virgin olive oil and grease the pan well;
  6. Pour the mixture, level it well, add the diced bacon and cook in a preheated oven for about 20-25 minutes at 190 degrees, it must brown;
  7. Turn off and let cool slightly;
  8. Transfer the courgette and scamorza omelette onto a nice tray and enjoy!!
  9. It’s simply amazing…enjoy your meal!!
