Spaghetti with courgettes, prawns and cherry tomatoes

INGREDIENTS

  • 500 g of courgettes;
  • 10 prawns;
  • 7/8 cherry tomatoes;
  • Extra virgin olive oil to taste;
  • Chopped parsley;
  • 1 clove of garlic;
  • Salt and pepper to taste;
  • Broth or water to taste

STEP

  1. First clean the fresh prawns thoroughly by removing the head, the shell and the black thread inside;
  2. Let’s wash them and place them in a container;
  3. Wash and cut the cherry tomatoes in half;
  4. Now we wash and dry the courgettes then remove the ends and obtain the spaghetti with the mandolin equipped with a julienne blade or with a lot of patience we can do it by hand;
  5. Pour the extra virgin olive oil into a pan, together with the garlic and brown;
  6. After that, remove the garlic and add the cherry tomatoes (which we have washed and cut in half) and cook with a ladle of broth or hot water until they have softened;
  7. Now add the prawns, cover with the lid and cook for a couple of minutes, turning them halfway through cooking (recommend that it is two minutes);
  8.  Season with salt and pepper, then add the courgette spaghetti and sauté everything for a minute over a high heat;
  9. Serve immediately with a nice handful of chopped parsley, a sprinkling of pepper and… enjoy!
