First clean the fresh prawns thoroughly by removing the head, the shell and the black thread inside;
Let’s wash them and place them in a container;
Wash and cut the cherry tomatoes in half;
Now we wash and dry the courgettes then remove the ends and obtain the spaghetti with the mandolin equipped with a julienne blade or with a lot of patience we can do it by hand;
Pour the extra virgin olive oil into a pan, together with the garlic and brown;
After that, remove the garlic and add the cherry tomatoes (which we have washed and cut in half) and cook with a ladle of broth or hot water until they have softened;
Now add the prawns, cover with the lid and cook for a couple of minutes, turning them halfway through cooking (recommend that it is two minutes);
Season with salt and pepper, then add the courgette spaghetti and sauté everything for a minute over a high heat;
Serve immediately with a nice handful of chopped parsley, a sprinkling of pepper and… enjoy!
