INGREDIENTS
- 1 kilo of anchovies;
- 400 g of stale bread, chopped;
- A pinch of salt, a pinch of pepper, a pinch of oregano;
- 150 g of grated cheese;
- 3 eggs;
- Half scamorza cheese, diced;
- Semolina flour for breading the anchovies;
- 4 egg whites;
- Peanut oil for frying
STEP
- Remove the bones from the anchovies, wash them under running water and dry them;
- Pour the ingredients, excluding the scamorza, into a bowl and mix;
- Take an anchovy, which we have deboned, stuff it with the mixture,
add a couple of cubes of scamorza;
- Close with the other anchovy;
- After that, pass them through the egg white, then through the semolina flour and fry in plenty of oil;
- Place on a plate lined with absorbent paper, then plate and enjoy piping hot…FABULOUS!
