Stuffed anchovies

INGREDIENTS

  • 1 kilo of anchovies;
  • 400 g of stale bread, chopped;
  • A pinch of salt, a pinch of pepper, a pinch of oregano;
  • 150 g of grated cheese;
  • 3 eggs;
  • Half scamorza cheese, diced;
  • Semolina flour for breading the anchovies;
  • 4 egg whites;
  • Peanut oil for frying

STEP

  1. Remove the bones from the anchovies, wash them under running water and dry them;
  2. Pour the ingredients, excluding the scamorza, into a bowl and mix;
  3. Take an anchovy, which we have deboned, stuff it with the mixture,
    add a couple of cubes of scamorza;
  4. Close with the other anchovy;
  5. After that, pass them through the egg white, then through the semolina flour and fry in plenty of oil;
  6. Place on a plate lined with absorbent paper, then plate and enjoy piping hot…FABULOUS!
