Trofie with shrimp, courgettes and cherry tomatoes

INGREDIENTS

  • 300 g of trofie;
  • 2 medium courgettes;
  • 1 shallot;
  • 1 clove of garlic;
  • 600 g of shrimp;
  • Fresh parsley;
  • 5-6 cherry tomatoes;
  • Extra virgin olive oil;
  • Salt;
  • Pepper

STEP

  1. Wash the courgettes well and cut them into thin slices;
  2. Shell the shrimp, clean them and wash them well under running water;
  3. Take a pan, pour oil, the sliced ​​shallot, the garlic clove and fry;
  4. When they are golden, remove the garlic, add the courgettes and cherry tomatoes cut into pieces and cook for about 10 minutes, adding (if necessary) a little hot water;
  5. Then add the prawns, the chopped parsley, season with salt and pepper, mix everything well and let it cook for a few minutes;
  6. Boil the trofie in plenty of salted water and when they are al dente, drain and pour into the pan with the courgettes and prawns, sautéing them for a few minutes to finish cooking;
  7. Serve hot with a nice handful of chopped parsley.. they are simply amazing!!
