Wash the courgettes well and cut them into thin slices;
Shell the shrimp, clean them and wash them well under running water;
Take a pan, pour oil, the sliced shallot, the garlic clove and fry;
When they are golden, remove the garlic, add the courgettes and cherry tomatoes cut into pieces and cook for about 10 minutes, adding (if necessary) a little hot water;
Then add the prawns, the chopped parsley, season with salt and pepper, mix everything well and let it cook for a few minutes;
Boil the trofie in plenty of salted water and when they are al dente, drain and pour into the pan with the courgettes and prawns, sautéing them for a few minutes to finish cooking;
Serve hot with a nice handful of chopped parsley.. they are simply amazing!!
