Shortcrust pastry roll with sour cherry jam and crumbled amaretti

INGREDIENTS

Ingredients for the shortcrust pastry:

  • 500 g of 00 flour for cakes;
  • 250 g of soft butter;
  • 200 g of icing sugar;
  • 1 level teaspoon of baking powder;
  • The grated zest of 1 lemon;
  • 2 egg yolks and 1 whole egg

For the filling:

  • Amaretti biscuits as needed;
  • 1 jar of Black Cherry jam

STEP

  1. Take a bowl, add the flour, sugar, yeast, soft butter and knead until the mixture becomes floury, add the eggs and work quickly;
  2. Form a loaf, cover with cling film and leave to rest for 1 hour in a cool place;
  3. Once rested, roll out the dough into a half-centimetre thick rectangle and add the filling of jam and crumbled amaretti biscuits;
  4. Roll the roll up on itself to create a sort of strudel, seal the edges well and place it on a baking tray lined with baking paper;
  5. Bake (oven already hot at 180 degrees) for about 25 minutes. Once baked, let it cool, cut the shortcrust pastry roll into 3-centimeter thick slices, so as to obtain the biscuits and sprinkle them with plenty of icing sugar;
  6. At this point, the delicious biscuit roll filled with amaretti and black cherry jam will be ready to be enjoyed!
