INGREDIENTS
Ingredients for about 20 cherry muffins:
- 200 g of cherries, pitted and cut into small pieces;
- 200 g of 00 flour for cakes;
- 200 g corn starch;
- a sachet of baking powder;
- 120 ml of sunflower seed oil;
- 1 x 125g jar of cherry yogurt;
- 1 dl of cream;
- 120 g of granulated sugar;
- 2 tablespoons of icing sugar;
- 1 whole egg and 1 yolk;
- 1 pinch of salt;
- 1 tablespoon of sugar
STEP
- In a bowl, mix the yogurt with the egg, the yolk, the salt, the oil, the granulated sugar and the cream, then gradually add the flour, the starch and the sifted yeast;
- Wash the cherries well;
- Stone and roughly chop the cherries;
- Add the cherry pieces that we marinated for a few minutes with a spoonful of sugar to the mixture, mix very delicately with a spoon;
- Take a muffin tray, place the paper cups and fill them two-thirds full with mixture, add a pitted cherry in the centre of the cup, making sure it sinks slightly;
- Cook them in the oven (already hot) at 180 degrees for approximately 20 minutes;
- Remove the muffins from the oven and let them cool;
- Sprinkle with icing sugar;
- Place on a nice tray and serve with a nice coffee or tea.. they are simply delicious.. they practically melt in your mouth!!
