Cherry Muffins

INGREDIENTS

Ingredients for about 20 cherry muffins:

  • 200 g of cherries, pitted and cut into small pieces;
  • 200 g of 00 flour for cakes;
  • 200 g corn starch;
  • a sachet of baking powder;
  • 120 ml of sunflower seed oil;
  • 1 x 125g jar of cherry yogurt;
  • 1 dl of cream;
  • 120 g of granulated sugar;
  • 2 tablespoons of icing sugar;
  • 1 whole egg and 1 yolk;
  • 1 pinch of salt;
  • 1 tablespoon of sugar

STEP

  1. In a bowl, mix the yogurt with the egg, the yolk, the salt, the oil, the granulated sugar and the cream, then gradually add the flour, the starch and the sifted yeast;
  2. Wash the cherries well;
  3. Stone and roughly chop the cherries;
  4. Add the cherry pieces that we marinated for a few minutes with a spoonful of sugar to the mixture, mix very delicately with a spoon;
  5. Take a muffin tray, place the paper cups and fill them two-thirds full with mixture, add a pitted cherry in the centre of the cup, making sure it sinks slightly;
  6. Cook them in the oven (already hot) at 180 degrees for approximately 20 minutes;
  7. Remove the muffins from the oven and let them cool;
  8. Sprinkle with icing sugar;
  9. Place on a nice tray and serve with a nice coffee or tea.. they are simply delicious.. they practically melt in your mouth!!
