Zucchini flan my way

INGREDIENTS

  • 1 kg of courgettes;
  • 120 g of grated cheese;
  • 3 tablespoons of 0 flour (or wholemeal),
  • 5 eggs;
  • Half a tablespoon of fine salt;
  • Chopped parsley;
  • Extra virgin olive oil;
  • Salt, half a clove of garlic, pepper and nutmeg to taste;
  • Breadcrumbs to taste

STEP

  1. Trim, wash thoroughly and grate (with a mandolin) the courgettes;
  2. Pour the grated courgettes into a bowl, add the eggs and mix;
  3. Add the grated cheese, flour, chopped parsley, chopped garlic, salt, pepper and nutmeg to the courgette and egg mixture and mix with a spoon to combine everything well;
  4. Add a drizzle of extra virgin olive oil to the mixture and mix;
  5. Take a 23 x 34 centimetre rectangular baking pan, grease it with extra virgin olive oil, sprinkle with breadcrumbs;
  6. Pour the courgette mixture into the pan that we greased and sprinkled with breadcrumbs, level it with a spoon, then drizzle with oil and sprinkle with more breadcrumbs;
  7. Cook at 190 degrees (preheated oven) for 35/40 minutes, (if it browns too much after 20 minutes cover with aluminium foil and finish cooking;
  8. Remove from the oven and let cool;
  9. Once it has cooled down, cut into squares and serve… it’s spectacular!!!
