Salt, half a clove of garlic, pepper and nutmeg to taste;
Breadcrumbs to taste
STEP
Trim, wash thoroughly and grate (with a mandolin) the courgettes;
Pour the grated courgettes into a bowl, add the eggs and mix;
Add the grated cheese, flour, chopped parsley, chopped garlic, salt, pepper and nutmeg to the courgette and egg mixture and mix with a spoon to combine everything well;
Add a drizzle of extra virgin olive oil to the mixture and mix;
Take a 23 x 34 centimetre rectangular baking pan, grease it with extra virgin olive oil, sprinkle with breadcrumbs;
Pour the courgette mixture into the pan that we greased and sprinkled with breadcrumbs, level it with a spoon, then drizzle with oil and sprinkle with more breadcrumbs;
Cook at 190 degrees (preheated oven) for 35/40 minutes, (if it browns too much after 20 minutes cover with aluminium foil and finish cooking;
Remove from the oven and let cool;
Once it has cooled down, cut into squares and serve… it’s spectacular!!!
