Olives or capers as desired, or nothing at all, the choice is yours.
STEP
In a large bowl prepare a mixture of vinegar and water (2 parts vinegar and 1 part water);
Take the tomatoes, after having dried them completely in the sun;
Transfer the dried tomatoes to a bowl and cover them with warm water and white wine vinegar. Let them soak for at least 30 minutes. Drain them and spread them out to dry on a clean cloth. Let them dry for 24 hours.
Prepare all the ingredients;
Start bottling (I recommend using sterilized jars, how to do it? boil them in water for 15 minutes, take them with kitchen tongs, place them on a cotton cloth and let them dry), adding layers, garlic, parsley, salt, mint, chili pepper, capers, olives to taste, according to personal taste. Now let’s fill the jars with oil;
The last layer must be completely covered with oil, so before hermetically sealing the jar, wait a day to top up;
The purpose of this operation is to preserve them as best as possible and not let the dried tomatoes go mouldy. In fact, it is important to always keep the tomatoes covered in oil even after consumption, adding as much as necessary from time to time.
Store for a couple of weeks, before eating them!!!! I also make excellent first courses with them!!!! amazing!!
How to dry tomatoes:
Take the tomatoes (San Marzano variety), wash them well, remove the stalk, then cut them in half, place the net taut in a very sunny place: it will be sufficient to fix it between two tables, holding it with weights at the ends of the sides;
Place the cut tomatoes on the net, making sure that they are facing the sun with the pulp, sprinkle some salt on the tomatoes and leave to dry in the sun;
Leave the tomatoes exposed to the sun from morning to evening, taking care to turn them from time to time, before nightfall, take care to remove them, to avoid that by leaving them outdoors they could be ruined by the night humidity, since in this way you will be able to make them lose all the water they contain, with the result that you will be able to preserve them without problems;
After about a week and depending on how much they dried, this depends on the temperature, we took them out. At this point you can decide whether to keep them as they are to bottle them at a later time, or proceed with the bottling. If you decide to keep them dry to use them at a later time, you can put them in a plastic bag and close them, be very careful that they are dry to the right point.
