Sweet, soft, and golden—like French toast meets pancake in an Italian kitchen!
đź•’ Ready In: 10 minutes (5 prep + 5 cook)
🍽️ Serves: 2–3
đź›’ Ingredients
- 2 medium apples (crisp, like Fuji or Gala)
- 2 eggs
- 3 tbsp sugar (adjust to taste)
- 2 tbsp milk or plant-based milk
- 1/2 tsp cinnamon (optional, but delicious)
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour (or almond flour for GF option)
- 1 tbsp butter or oil for the pan
- Powdered sugar or honey for topping (optional)
🔪 Instructions
1. Prep the apples
- Peel (optional) and thinly slice the apples. Aim for about 1/8-inch slices so they cook quickly.
2. Make the batter
- In a bowl, beat the eggs with sugar until frothy.
- Add milk, vanilla, cinnamon, and flour. Mix until smooth.
3. Cook it up
- Heat butter or oil in a nonstick skillet over medium heat.
- Add apple slices and sauté for 2–3 minutes until they start to soften.
- Pour the batter evenly over the apples.
- Cover with a lid and cook for 2–3 minutes, or until the bottom is golden and the top is mostly set.
4. Flip or fold
- Option A: Flip the frittata onto a plate and slide it back into the pan to cook the other side for 1 minute.
- Option B: Fold it in half like an omelet—no flipping stress!
5. Serve
- Slide onto a plate, dust with powdered sugar, or drizzle with honey or maple syrup. Enjoy warm!
✅ Do’s
- ✅ Use a small skillet (6–8 inch) for a thick, fluffy result.
- âś… Try with pears or bananas for a twist!
- âś… Great for kids or quick desserts too.
❌ Don’ts
- ❌ Don’t skip covering—it helps the top cook through quickly.
- ❌ Don’t overcook the apples—you want them tender, not mushy.
- ❌ Don’t walk away—it’s fast and easy, but also easy to forget on the stove!
