Servings: 2
Prep Time: 5 minutes
Cook Time: 5–10 minutes
Ingredients
- 2 slices of your favorite bread (sourdough or whole-grain work wonders)
- 1 ripe avocado (soft but not mushy—Goldilocks level ripe)
- 2 large eggs (fried, poached, or scrambled—your call!)
- 1 tbsp olive oil or butter (for cooking the eggs)
- ½ tsp lemon juice (for a zesty kick)
- Salt and pepper, to taste
- Optional toppings: red pepper flakes, everything bagel seasoning, chopped parsley, or a drizzle of hot sauce
Instructions
- Toast the Bread:
- Pop your bread slices into the toaster until golden brown. Not a toaster fan? Use a pan for extra crunch!
- Prep the Avocado:
- Cut the avocado in half, remove the pit (carefully—this is not the time for injuries), and scoop the flesh into a bowl. Mash it with a fork, leaving it as smooth or chunky as you like. Add the lemon juice, a pinch of salt, and a dash of pepper.
- Cook the Eggs:
- Heat the olive oil or butter in a nonstick skillet over medium heat.
- Fried Egg: Crack an egg into the skillet and cook until the whites are set and the yolk is as runny or firm as you like.
- Poached Egg: Simmer water with a splash of vinegar, crack the egg into the water, and cook for 3–4 minutes.
- Scrambled Egg: Beat the egg, pour it into the skillet, and gently scramble.
- Assemble the Toast:
- Spread the mashed avocado generously over each slice of toast. Top with the egg, and sprinkle with your favorite toppings.
- Serve Immediately:
- Plate it up and enjoy your deliciously Instagram-worthy breakfast!
Do’s and Don’ts
DO:
- Use fresh, quality bread for a solid base.
- Season the avocado well—it’s good plain, but a little salt, pepper, and lemon juice make it sing.
- Experiment with toppings; avocado toast loves creativity.
DON’T:
- Use an overripe avocado. Nobody wants avocado mush soup on their toast.
- Neglect your egg game—practice makes perfect!
- Forget to eat it while it’s fresh. Nobody likes cold toast.
Optional Add-Ins and Variations:
- Protein Boost: Add smoked salmon, turkey bacon, or sliced chicken.
- Cheese Please: Sprinkle feta or grated Parmesan on top.
- Veggie Love: Add sliced tomatoes, cucumbers, or arugula for a fresh crunch.
Avocado Toast with Egg is a classic for a reason. It’s quick, healthy, and packed with flavor. Whether it’s breakfast, brunch, or a snack, this dish never disappoints. 🥑🍳🍞
