Ingredients

 - 1 medium onion, diced

 - 1 ham bone (or 2 cups diced cooked ham)
 - 6 cups (1.5 liters) chicken or vegetable broth
 - 3 cans (15 oz/425g each) white beans (cannellini or great northern), rinsed and drained
 - 1 tsp dried thyme
 - 1 tsp smoked paprika
 - 2 bay leaves
 - Salt and pepper to taste
 - Optional: 1/2 tsp red pepper flakes for a bit of heat
 - Fresh parsley, chopped (for garnish)
 
Instructions
- Sauté the Veggies:
- Heat the olive oil in a large pot over medium heat.
 - Add the onion, carrots, and celery. Cook for about 5 minutes until softened.
 - Stir in the garlic and cook for 1 minute, just until fragrant.

- Place the ham bone or diced ham in the pot.

 - Shred the Ham:
- If you used a ham bone, remove it from the pot and shred any remaining meat off the bone. Return the meat to the soup.

- Taste the soup and season with salt and pepper as needed. (Go easy on the salt at first; ham can be quite salty.)
