Salmon farfalle

Ingredients:

320 g farfalle pasta
200 g smoked salmon
1 shallot
30 g butter
200 ml fresh cream
1 small glass of vodka absolute
1 tablespoon tomato puree
nutmeg
salt
chives

Cook the pasta in a pot with plenty of salted water.

Meanwhile, cut the salmon into pieces. In a pan, brown the finely chopped shallot in the butter. Add the salmon.

Deglaze with vodka.

Now pour in the cream and a pinch of nutmeg. Mix, season with salt and add a tablespoon of tomato puree.

Stir the salmon sauce and bring to the boil, then turn off the heat.
Drain the farfalle al dente, pour them into the pan and mix everything together gently. Then place the farfalle with salmon on the plates, add a few pieces of smoked salmon kept aside and decorate with chopped chives
