-200ml of milk
-200 gr of sugar

Preparation
We will separate the yolk from the white, we will put them in 2 different bowls. First we will mix the egg whites well, sprinkling the sugar until stiff. This is done separately so that it is very soft.
What we do instead with the yolk is beat it well and add the oil, vanilla essence, lemon zest and milk. We mix for about 10 minutes (you can help yourself with a mixer) 100 ml of Oil
In the bowl of the egg whites we add everything we did in the other bowl and mix. We add the flour little by little, I recommend that you always try to sift the flour, so as not to form a single lump. We beat for another 5 minutes.
Preheat the oven to about 180ºC (medium heat). Oil and flour a baking tray or mold, pour in the mixture and put in the oven for about 30-40 minutes.
The time depends, sometimes it takes more sometimes less, it depends on the power of your oven. When it is ready you will simply notice a smell of cooked cake, that is when you will have to insert a knife and be careful, if it comes out dry it is because it is already ready.

You can make this type of cake in Essen, I simply set it on the lowest heat (the lowest possible on your stove).
If it burns, nothing happens, what the big bakeries do to make cakes is scrape off the burnt part with a knife or if it is very burnt they remove it by cutting it, the good thing is that this type of burning does not give that bad taste to the whole cake.
What to do to have a moist Lemon Cake?
Easy, we just need to make a syrup and also to cover the cake we can make a glaze, we simply need:
150 g of sugar
150 gr of water
200 g of icing sugar
Juice of 1 lemon
To prepare the syrup, simply put the water and sugar in a saucepan over medium heat, wait for it to boil and turn off, leaving it to rest for a few minutes.
For the icing, simply put the icing sugar in a container and add the lemon juice, simply mix well until you get a thick liquid.
Now we simply open the cake in half and add the syrup (in the 2 pieces) and close it, leave it on a rack and add the icing on top and let it drain for a few minutes and we would have a delicious lemon cake. moist and delicious.
