ACE Carrot, Orange and Lemon Cake

Ingredients and Preparation of the ACE Carrot, Orange and Lemon Cake


Ingredients

  • 3 eggs
  • 250 g of carrots
  • 300 g of 00 flour
  • 50 g corn starch
  • 200 g of sugar
  • 100 ml of orange juice
  • 50 ml of lemon juice
  • Zest of 1 orange and 1 lemon
  • 80 ml of sunflower seed oil
  • 1 sachet of baking powder
  • Powdered sugar to taste

Instructions

  • Finely grate the carrots and squeeze the orange and lemon juices.
  • Beat the eggs with the sugar until the mixture is light and frothy.
  • Add the oil, citrus juices and zest, stirring continuously.
  • In a separate bowl, sift together the flour, cornstarch and baking powder. Gradually add to the liquid mixture.
  • Gently incorporate the grated carrots, mixing carefully.
  • Pour the mixture into a greased and floured pan and bake in a preheated oven at 180°C for 40-45 minutes.
  • Check the cooking with a toothpick: if it comes out dry, the cake is ready.
  • Let cool completely before decorating with icing sugar.
