Ingredients and Preparation of the ACE Carrot, Orange and Lemon Cake
Ingredients
- 3 eggs
- 250 g of carrots
- 300 g of 00 flour
- 50 g corn starch
- 200 g of sugar
- 100 ml of orange juice
- 50 ml of lemon juice
- Zest of 1 orange and 1 lemon
- 80 ml of sunflower seed oil
- 1 sachet of baking powder
- Powdered sugar to taste
Instructions
- Finely grate the carrots and squeeze the orange and lemon juices.
- Beat the eggs with the sugar until the mixture is light and frothy.
- Add the oil, citrus juices and zest, stirring continuously.
- In a separate bowl, sift together the flour, cornstarch and baking powder. Gradually add to the liquid mixture.
- Gently incorporate the grated carrots, mixing carefully.
- Pour the mixture into a greased and floured pan and bake in a preheated oven at 180°C for 40-45 minutes.
- Check the cooking with a toothpick: if it comes out dry, the cake is ready.
- Let cool completely before decorating with icing sugar.
