Instructions:
- Preheat the oven to 180°C and prepare a buttered and floured cake tin.
- In a bowl, beat the cream cheese and sugar until smooth.
- Add the lemon juice, zest and eggs one at a time, mixing well after each addition.
- In another bowl, sift together the flour, cornstarch, baking powder, and salt.
- Combine the dry ingredients with the cheese mixture and mix gently. Pour in the sunflower oil and mix until the dough is smooth.
- Pour the batter into the pan and smooth the surface. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely and sprinkle with icing sugar before serving.
