A dish packed with flavour and colour, perfect for a nutritious and healthy meal! Red lentils and cauliflower blend together in a creamy and spicy curry, which warms the heart and satisfies the palate.
Ingredients (for 4 people):
🌿 200g red lentils
🥦 1 small cauliflower (about 400g)
🍅 400g peeled tomatoes (tinned)
🧅 1 onion
🧄 2 cloves garlic
🍛 1 tbsp curry powder
🥣 400ml vegetable stock
🫒 2 tbsp olive oil
🧂 Salt and pepper to taste
🌿 Fresh coriander (optional for garnish)
Method:
Prepare the vegetables:
Chop the onion and crush the garlic. Wash the cauliflower and cut it into florets.
Fry the vegetables:
In a large saucepan, heat the olive oil and add the chopped onion and garlic. Sauté for about 3-4 minutes until golden and fragrant.
Add the curry:
Add the curry powder and stir well for a minute, so that the spices release all their aroma.
Cook the curry:
Now add the red lentils, cauliflower, peeled tomatoes and vegetable stock. Stir well and bring everything to the boil.
Cooking:
Lower the heat and simmer for about 20-25 minutes, stirring occasionally, until the lentils are tender and the cauliflower has softened. Season with salt and pepper to taste.
Serve:
Garnish the dish with a little fresh coriander if you like and serve hot, perhaps accompanied by basmati rice or naan bread.
Tips:
You can add a pinch of turmeric for an extra touch of color and flavor!
If you prefer a creamier curry, you can add a little coconut milk during cooking.
