Baked Zucchini, Potatoes and Mozzarella

A delicious and easy to prepare dish that will conquer everyone!

Ingredients:


2 zucchini
3-4 potatoes (already cooked)
2 eggs
Salt and pepper to taste
Grated Parmesan cheese
Grated Pecorino cheese
2 tablespoons of flour
2 tablespoons of breadcrumbs
Mozzarella

Method:

Prepare the vegetables: Grate the previously cooked zucchini and potatoes in a bowl.
Combine the ingredients: Add the eggs, salt, pepper, Parmesan cheese, pecorino cheese, flour and breadcrumbs. Mix well until the mixture is smooth.
Add the mozzarella: Cut the mozzarella into small pieces and add it to the mixture.
Form the fritters: With the mixture, form fritters and place them on a baking sheet.
Bake: Bake in a preheated oven at 180°C for about 20 minutes, until golden and crispy.
Serve hot and enjoy this delicious combination of flavors!
