Delight your palate with these salmon fillets prepared Mediterranean style, a simple and tasty dish!
Ingredients (for 4 people):
4 salmon fillets (about 150 g each)
2 tablespoons olive oil
1 onion (finely chopped)
2 cloves garlic (finely chopped)
1 red pepper (diced)
1 courgette (diced)
200 g cherry tomatoes (halved)
100 g black olives (pitted)
1 tablespoon capers
1 tablespoon apple cider vinegar
Salt and pepper to taste
Dried oregano to taste
Chopped fresh parsley to taste
Preparation:
In a pan, heat the olive oil and fry the onion and garlic until golden.
Add the pepper and courgette, cooking for about 5 minutes.
Add the cherry tomatoes, olives, capers, vinegar, salt, pepper and oregano. Mix well and cook for another 5 minutes.
Finally, add the salmon fillets, covering the pan and cooking for 8-10 minutes, until the salmon is cooked and tender.
Serve hot, garnished with chopped fresh parsley.
