Ingredients:
400 g of rigatoni (or the pasta you prefer) 🍝
2 sausages (prefer the fresh ones) 🌭
150 g of smoked bacon (or guanciale, if you want to make the original version) 🥓
1 can of peeled tomatoes (or tomato puree, if you prefer) 🍅
Salt and black pepper to taste 🧂
4 egg yolks 🥚
50 g of grated pecorino romano 🧀
Freshly ground black pepper to taste 🌶️
Olive oil (for browning)
Preparation:
Cook the pasta:
Bring plenty of salted water to the boil and cook the rigatoni al dente following the instructions on the package. Drain them, but keep a little of the cooking water to stir into the sauce!
Brown the sausage:
In a large skillet, heat a drizzle of olive oil and add the crumbled sausage. Brown over medium-high heat, stirring occasionally, until golden and crispy.
Add the bacon (or guanciale):
Add the diced bacon (or guanciale). Cook with the sausage until nice and crispy, releasing all its flavor!
Add the tomato:
Add the peeled tomatoes (or passata) to the skillet and cook for 10-15 minutes, until the sauce thickens. Season with salt and pepper to taste.
Skip the pasta:
When the sauce is ready, add the al dente rigatoni to the skillet with the sauce. If necessary, add a little cooking water to make it creamier. Stir well to blend the flavors!
Stir in the egg yolks and pecorino:
Remove the pan from the heat and quickly add the egg yolks and grated pecorino romano. Stir well, creating a velvety cream that envelops the pasta. The heat of the pasta will gently cook the yolks!
Pepper to taste:
Sprinkle with freshly ground black pepper for an extra touch of flavor!
Extra tips to make them even more delicious!
For more flavor, you can add a pinch of red chili pepper while you brown the sausage.
If you like a richer dish, add a little fresh cream to the sauce to make it creamier.
If you want to give it an extra boost, you can grate more pecorino over the ready dishes for a wow effect!
