Potato Meatballs

Ingredients

  • 520g potatoes (about 4 medium)
  • 1/2 teaspoon salt 
  • 50g skinless sausage
  • 50 g grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (or dill)
  • 80 g corn starch
  • Vegetable oil for frying

Instructions

  1. Boil potatoes : Cook the potatoes with their skins in salted water until they are soft. Peel and mash them while still warm in a large bowl.
  2. Combine ingredients : Add crumbled sausage, Parmesan, parsley and salt. Mix well until smooth.
  3. Incorporate the cornstarch : Add the starch a little at a time to give it consistency.
  4. Form the meatballs : Take small portions of dough, shaping them with damp hands to obtain uniform balls.
  5. Frying : Heat the oil and fry the meatballs until golden brown, turning often.
