Tall and Soft Chocolate Cake

Ingredients

🍫 200g dark chocolate (min. 70% cocoa for an intense flavor)
🧈 150g unsalted butter
🥚 4 large eggs
🍬 200g granulated sugar
🌾 100g 00 flour
✨ 1 teaspoon baking powder
🧂 A pinch of salt
🌸 1 teaspoon vanilla extract (optional, but recommended!)
❄️ Icing sugar to decorate (optional)


Process


1️⃣ Prepare the oven:
Preheat the oven to 180°C. Butter and flour a 20-22cm round tin, or line it with baking paper.
2️⃣ Melt chocolate and butter:
Melt dark chocolate and butter in a bath (or microwave in short intervals), stirring until smooth. Let it cool just a little.
3️⃣ Assemble eggs and sugar:
In a large bowl, beat eggs with granulated sugar until light, fluffy and three times as thick as possible.
4️⃣ Melt chocolate:
Slowly pour melted chocolate into egg mixture, stirring gently with a spatula to keep air encrusted.
5️⃣ Add dry ingredients:
Sift flour, baking powder and a pinch of salt. Stir dry ingredients into mixture, gently stirring from bottom to top. Add vanilla extract if using
6️⃣ Pour and level:
Transfer batter to prepared pan, leveling surface with a spatula.
7️⃣ Cook with care:
Bake for 25-30 minutes. Check doneness by inserting a toothpick: it should come out with a few moist crumbs for a soft and fluffy cake in the center.
8️⃣ Cool and decorate:
Let cake cool in pan for 10 minutes, then transfer to a grater. Once completely cool, dust with icing sugar or add a chocolate glaze for an extra touch!

Add a special touch: Stir a handful of chocolate chips or chopped nuts into the batter.
Serve in style: Serve with a scoop of vanilla ice cream or a dollop of whipped cream for a dreamy dessert.
Storage: Keep the cake soft by covering it with cling film or in an airtight container. It stores perfectly for 3-4 days.
