Stewed meatballs with carrots and peas are the perfect comfort food for a family dinner! Warm and tasty, they will conquer all palates!
Ingredients:
🍖 Ground beef
🥚 2 eggs
🍞 Breadcrumbs
🧄 1 clove garlic (minced)
🧂 Salt
🌶️ Pepper
🧀 Grated cheese
🛢️ Extra virgin olive oil
🥬 1 celery stick
🥕 2 carrots
🧅 1 onion
🍃 Peas (fresh or frozen)
🥣 1 stock cube
💧 Hot water
🌿 Fresh parsley (for garnish)
Method:
Prepare the Meatballs: In a large bowl, mix the ground beef with the eggs, breadcrumbs, minced garlic, salt, pepper and cheese. Form uniform sized meatballs and set aside.
Sautéed :In a large pot, heat a little extra virgin olive oil and sauté the finely chopped celery, carrots and onion until soft and golden.
Add the Peas: Add the peas to the pot and stir. Cover with hot water and add a stock cube to season.
Cook the Meatballs: When the water starts to boil, gently drop the meatballs into the pot.
Cook: Reduce the heat and cover with a lid. Cook on low heat for about 25 minutes, until the meatballs are cooked and tasty.
Serve: Remove from the heat, garnish with chopped fresh parsley and serve the stewed meatballs with carrots and peas. Perfect with a side of mashed potatoes or fresh bread!
