Invisible Banana Cake

A delicious variation of the famous French cake, perfect for those who love light and fragrant desserts! The combination of ripe bananas and a thin dough makes this cake soft, moist and irresistible! Ideal for breakfast, a snack or as a light dessert.

Ingredients for a 20 cm :

🍌 2 ripe bananas (the riper they are, the sweeter they will be!)
🥚 2 eggs
🍬 80 g sugar (you can reduce to 60 g if you prefer it less sweet)
🥛 100 ml milk (for a soft texture)
🌾 70 g 00 flour
🧁 1 teaspoon baking powder
🧂 1 pinch of salt
🍚 Icing sugar to decorate (optional, but adds a chic touch!)

Method:

1️⃣ Preparation of the bananas:
Peel the bananas and cut them into thin slices, about 2-3 mm thick. Place the slices in a bowl and sprinkle a few drops of lemon juice to prevent them from oxidizing. Set aside.
2️⃣ Dough preparation:
In a bowl, beat the eggs with the sugar until the mixture is light and frothy. Add the milk and mix well. Sift the flour with the yeast and add it to the mixture, a little at a time, mixing gently to avoid lumps. Add a pinch of salt to balance the dessert.
3️⃣ Cake assembly:
Add the banana slices to the mixture and mix gently with a spatula to avoid breaking the slices. Pour the mixture into a cake pan lined with baking paper, leveling the surface well.
4️⃣ Cooking:
Bake at 180°C in a preheated static oven for about 40-45 minutes. The cake is ready when the surface is golden and, inserting a toothpick, it comes out clean.
5️⃣ Decoration and serving:
Let the cake cool completely before unmolding it. If you like, sprinkle with powdered sugar for a final touch of sweetness!
Extra tip:
You can enrich the dough with a pinch of cinnamon or a few drops of vanilla for an even more enveloping aroma! Also, for an even more delicious effect, add some chocolate chips to the dough or on top of the cake before baking.
