Fresh and tasty winter salad

This fresh and tasty winter salad is a light and tasty dish, perfect for the cold months. It combines radicchio, fennel, oranges and walnuts, offering crunch, sweetness and health in every bite. Easy to prepare, it is ideal as an appetizer, side dish or main course.


Ingredients

  •  1 head of radicchio , cut into thin strips
  •  1 handful of fresh rocket
  •  1 orange , peeled and cut into wedges
  •  1 fennel , thinly sliced
  •  1 handful of walnuts , chopped
  • 2 – 3 tablespoons of extra virgin olive oil
  • 1 teaspoon lemon juice or balsamic vinegar (optional)
  • Salt and pepper , to taste

Instructions

  • Prepare the ingredients:
    • Wash and dry the radicchio, rocket and fennel thoroughly.
    • Cut the radicchio into strips and slice the fennel thinly.
    • Peel the orange, remove the white filaments and cut it into segments.
  • Assemble the salad:
    • In a large bowl, combine the radicchio, arugula, fennel, and orange segments.
    • Add chopped walnuts for a crunchy touch.
  • Dress the salad:
    • In a small bowl, mix the extra virgin olive oil with the lemon juice or balsamic vinegar.
    • Add salt and pepper to taste and pour the dressing over the salad.
    • Mix gently to evenly distribute the seasoning.

Notes

  • For a more intense flavor, try lightly toasting the nuts before adding them.
  • If you prefer a heartier salad, add a few slices of avocado or a protein like grilled chicken or tofu.
  • You can prepare the ingredients in advance and assemble the salad only when ready to serve to maintain freshness.
