Preparation Steps:

1. Prepare the Vegetables: Start by cutting the eggplant, peppers and zucchini into medium sized pieces. Try to get them to a uniform size to ensure even cooking.

2. Season: In separate bowls, season each vegetable (eggplant, peppers, and zucchini) with 1/2 teaspoon salt, 1/3 teaspoon pepper, and 1 tablespoon olive oil. This initial seasoning helps bring out their natural flavors.
