Heavenly Cheesecake: Every Bite Will Be Heavenly!

Here’s a recipe for a Heavenly Cheesecake that will make you feel like you’re eating a cloud of sweetness! This cheesecake is creamy, rich and delicate, with a crunchy base and a topping that makes it even more irresistible.

Ingredients:


For the base:
200g digestive biscuits (or similar dry biscuits)
100g melted butter
2 tablespoons sugar (optional, depends on the type of biscuits)
For the cream:
500g spreadable cheese (such as Philadelphia, or other creamy cheese)
200ml fresh whipping cream
150g sugar
3 eggs
1 teaspoon vanilla extract (optional)
1 tablespoon flour (to make the cream more compact)
Zest of 1 lemon (optional, for a fresh touch)

For the topping (optional but delicious!):
100g fresh fruit (such as berries, strawberries, mango, or a combination of these)
2 tbsp berry jam or fruit jelly (to glaze the fruit)
Icing sugar (to decorate)


Method:


1. Make the base:
Finely crush the biscuits in a blender until you get a fine powder.
Add the melted butter and sugar (if using) to the crushed biscuits and mix well until you get a sandy but compact mixture.
Line the bottom of a springform pan (diameter about 22 cm) with baking paper and press the biscuit mixture well onto the bottom to form an even base.
Place the pan in the fridge to rest while you prepare the cream, so that the base becomes firm.
2. Make the cream:
In a large bowl, whip the fresh cream until it becomes firm (not too much, otherwise it could become buttery).

In another bowl, mix the cream cheese and sugar until smooth and lump-free.
Add the eggs one at a time, mixing well each time, then fold in the flour and lemon zest (if using).
Finally, add the whipped cream to the cheese mixture and mix gently with a spatula to obtain a soft and smooth cream.
3. Bake the cheesecake:
Pour the cream onto the now firm biscuit base and level the surface with a spatula.
Bake in a preheated oven at 160°C for about 45-50 minutes. The cheesecake will be ready when the edges are lightly golden and the center is just firm (a little wobbly in the center).
Turn off the oven and leave the cheesecake inside with the door slightly open for another hour. Then, transfer the cheesecake to the refrigerator and let it cool for at least 4 hours (better if overnight).
4. Prepare the topping:
Once the cheesecake has completely cooled, decorate it with fresh fruit of your choice. If you want a glossy effect, slightly warm some berry jam or fruit jelly and gently brush the surface of the fruit.

If you like, you can add a little icing sugar on top of the fruit for an elegant and sweet touch.
5. Serve:
Cut the cheesecake into slices and serve cold, perhaps accompanied with a chocolate sauce or caramel if you like the extra delicious combination.
Tips :
Fruit: You can vary the fruit depending on the season, choosing fruits such as blueberries, raspberries, strawberries, kiwi or even tropical fruits.
Extra flavor: If you want an even richer flavor, you can add a little liqueur (such as Grand Marnier) to the cream filling for an aromatic touch.
Alternative base: For a different flavor, you can use chocolate biscuits or even make a base with salted crackers for a contrast of sweet and salty.
