Canestrelli: Italian biscuits that conquer the heart and the palate

Ingredients:

150g all-purpose flour
100g cornflour
150g butter
75g sugar
3 hard-boiled egg yolks
1 tbsp vanilla sugar
Lemon zest
Icing sugar, to decorate

Instructions:

Preheat the oven to 180°C/350°F.
In a large bowl, mix together the flour, icing sugar, cornflour, lemon zest and vanilla sugar.
Add the butter to the mixture and rub it in with your fingers until it forms coarse crumbs.
Pass the egg yolks through a sieve and fold into the mixture. Shape the dough into a disc, wrap in plastic and leave to cool for 30 minutes.
Roll out the dough to 0.5cm thick and cut out the flower shapes.
Bake the cookies on a baking sheet for 20-25 minutes.
Sprinkle with powdered sugar before serving.
